2 tablespoons olive oil
2 tablespoons vinegar
6oz of Mortadella (4 slices)
2oz of Provolone cheese (2 slices)
Sweet pepper Relish (or hot pending how you like it)
Ripe Red Tomatoe
Slice the Ciabatta bread lengthwise and scoop out one side. Coat each side with oil and vinegar; spread an even layer of sweet pepper relish on 1 side of the roll. On the other half, lay 4 slices of Mortadella evenly and then 2 slices of provolone on top. Finish the sandwich with fresh, ripe tomatoes and place the other half of bread on top.
Try it hot!
Finish the sandwich on a panino press or wrap the sandwich in foil and place in a preheated 350 degree oven for 10-15 minutes or until the cheese is melted and the sandwich is hot.
